Whisky writer Dave Broom once said “If the ship was going down within sight of a desert island, my flailing left hand would make a grab for a bottle of Redbreast.” We agree! While single malts use 100% malted barley, single pot still Irish whiskeys must use both malted and unmalted barley (at least 30% of each), with the option to also use small amounts of other cereals.
The unmalted barley brings a unique spiciness and silky, creamy mouthfeel. Robust Redbreast uses around 60% unmalted barley and 40% malted barley (no other grains), is triple pot distilled, and is matured in high quality first fill casks, both ex-bourbon and a healthy proportion of made to order oloroso sherry butts (this isn’t a finish – the different casks are blended together). The 12 year old is a true classic, and here’s the non-chill filtered cask strength edition!
