We’re back on Skye again! Talisker’s storied history dates back to 1830, when the isle was the definition of remote. (If you can’t picture it, there can be only one. It’s the rugged Hebridean island where the sword training montage in Highlander culminates. If that helps…?) Fortunately since 1995 it’s been linked to the mainland by a bridge making this fantastic distillery much easier to visit.

They have an unusual still setup, with a u-bend in the lyne arms and a purifying return pipe, increasing reflux. Yet a balance is struck as all the stills also flow into worm tubs, which reduce copper contact. Deft use of peat is the name of the game once again, but Talisker’s malt has a lower initial peat level than neighbours Torabhaig (around 75% peated malt [20-25 PPM] mixed with 25% unpeated). This excellent Distillers Edition is finished in Amoroso (a rich, sweetened sherry) casks.

The Glendronach - Ode to the Valley

Glendronach, founded in 1826, has become synonymous with rich, sherried goodness. This reputation was built under the custodianship of previous master distiller Billy Walker, and has continued following Brown Forman’s purchase of the distillery in 2016 under the expert eye (and nose) of master blender Dr. Rachel Barrie. She tells us that “Ode to the Valley sings of an abundance of ripe fruit, it is the landscape of The Glendronach Distillery in full glory”.

Here, their usual signature high quality Spanish sherry casks (intense raisin-y Pedro Ximénez, and dry nutty Oloroso) are joined by fruity Ruby Port casks from the Duoro Valley in Portugal. It’s part of The Master’s Anthology, a new trilogy of malts completed by Ode to the Dark (just PX sherry), and Ode to the Embers (sherry and peat), which are also well worth seeking out.

Douglas Laing has long been one of our favourite independent bottlers. Established in 1948, the family owned company is now onto its third generation with director of whisky Cara Laing taking the reins. From their ‘Remarkable Regional Malts’ range, Timorous Beastie is a blended malt crafted from single malt whiskies exclusively hailing from the Highlands such as Glen Garioch, Dalmore and Glengoyne.

Once again, however, there’s a twist, as this one has been finished in casks that once held WESTWERK03 – a rich, strong (8.4%) malt-forward limited edition Doppelbock, which was itself barrel-aged for 80 days in former Timorous Beastie whisky casks! The beer comes from Glasgow’s legendary WEST Brewery, the only brewery in the UK to officially adhere to the Reinheitsgebot, the German Purity Law of 1516.
