Built in 1959, Tormore’s a somewhat eccentric distillery that broke the mould architecturally, and features purifiers on all the stills. These increase reflux, condensing heavier vapours and sending them back to the still, which contributes to the spirit’s light, fruity style.\u003c\/p\u003e\n\u003cp\u003eSukhinder and Rajbir Singh’s Elixir Distillers bought Tormore 2022 (they’ve also all-but-built a new distillery on Islay called Portintruan), and doubled down on fruit-forward elegance, returned to older styles of yeast (a mix of distillers and ale yeasts), and extended their long and short fermentations. This 12 Year Old was aged in complementary bourbon, cream sherry, and toasted American white oak casks.
