Working with local farmers to grow their own rye led to the release of Ragtime Rye, and the Empire Rye regional whiskey standard, but the story of Jaywalk begins with an investigation into historic New York rye varieties alongside Cornell University and just 10 seeds of Horton rye: a true heirloom grain with fruitier, less spicy characteristics from the 1700s.\u003c\/p\u003e\n\u003cp\u003eIt then took around 5 years to propagate, test, and grow enough to even start using it in whiskeys! This bottled in bond release is made with 75% New York rye (including Horton rye), 13% corn, and 12% malted barley.
