A classic award-winning Irish single malt from Bushmills, the 16 Year Old is aged in three different cask types. It begins its maturation in oloroso sherry butts and bourbon barrels, before being moved to Port pipes for a year-long finish. It’s this finishing period that imparts a wealth of jammy, juicy red fruit to the mix, alongside honey sweetness and baking spices from the initial maturation.
Bushmills celebrated its 415th birthday this year, and lays claim to the title of the world’s oldest licensed distillery, with official records dating back to 1608. Perhaps self-explanatory, it was named for the mills that dotted the town all along the River Bush, where it draws its water from. Though it’s been around for a while it shows no signs of slowing down – just this year it opened a second site, the Causeway Distillery, to keep up with growing demand.
Honey, stone fruit, and yoghurt creaminess, with dried cranberries leading into dark caramel and a sprinkle of cinnamon.
Roasted apricot, summer berries, more runny honey, and oak spiciness. Oily walnuts and chewy toffee follow.
Homemade berry jam and dark chocolate appear, along with a dollop of maple syrup.
